BUT WAIT... What is it?! 

WELSH RAREBIT MIXTURE

It's a well-documented fact that Fergus is a fan of a good lunch. So what does he do about supper? Here's a lesser known fact... he likes nothing more than to eat cheese on toast, in bed, while watching Game of Thrones. The decadence! The happiness!

At St. JOHN our menu changes twice daily, but two items always remain: the Bone Marrow & Parsley Salad, and our Welsh Rarebit. 2014 marked the 20th birthday of St. JOHN, and also the point at which we reached a quarter of a million rarebits served in our bar. This gently spiced, cheesy preparation allows the home cook (or the cook-shy!) to replicate our much-loved bar snack in moments. Grill until golden and bubbling, add a dash of Worcestershire Sauce and enjoy with a nice glass of Burgundy as you do at St. JOHN... or make like Fergus, but watch out for cheesy crumbs on the bedclothes!

TROTTER GEAR 

Trotter Gear is so entrenched in the culinary lexicon of St. JOHN that there is an entire chapter devoted to it in Fergus' iconic Complete Nose to Tail. The packet reads "UNCTUOUS POTENTIAL, in true St. JOHN minimal style and this description, though possibly a little oblique, truly sums up this wonder product.  It does exactly what it says on the tin (packet).

Potential indeed: Fergus explains that "Trotter Gear soothes meat through the traumatic heating experience, creating a nurturing force field in which it can tenderise and flourish.  It is a wobbly magic potion". Endlessly versatile, it is an intense ingredient and the base of many of our most popular and enduring dishes.

Trotter Gear contains pieces of giving trotter captured in a deep jelly, rich with Madeira, aromatic vegetables, peppercorns, herbs and wine. As Fergus wrote in his book, "This unctuous, giving gastronomic tool is all chefs' friend, finding untold uses in the kitchen". Perfect in pies, essential for stews and braises, or ideal just poured over comforting bangers and mash
on a Sunday night.

WEEKEND WINE PLANS

Who is this, looking glamorous in the boot of that racy car? It's lovely Ruth Spivey, founder of the Wine Car Boot.  We will be joining her next Saturday for a wonderful wine filled day out - "a celebration of London's thriving wine scene", in the words of our friends Noble Rot.

The aforementioned Noble Rot will be there, serving Oysters and Muscadet! Planet of the Grapes will be providing the pun, Berry Bros. will be providing the fun - last year they had a wine wheel of fortune to decide your glass. What will they do this year?!
We will be there with six of our best loved and most interesting wines, especially for you to try. If you like what you taste you can commit to a glass... or a bottle... or a couple to take home. Or just carry on tasting! And not only that, we will have OX HEART BUNS from our barbecue and DOUGHNUTS too, to sustain you through all that sampling. 

Champagne and doughnuts?  Red wine and Ox Heart Buns?  Oh, go on then...

Entry is free, the location is truly stunning, and if you've always wanted to sail through the air on one of those cable cars, now's your moment. A day of wine and an airborne exit, what better way to spend your Saturday.
